They are both delicious and full of lycopene, which protects against heart disease and cancer. Serve them roasted as an appetizer for a dinner party and your guests will swoon, despite how simple they are to prepare.

Roasted Tomatoes
Cut several Roma Tomatoes in half lengthwise and place them in a shallow baking dish.
Douse with olive oil, a few tablespoons worth
Sprinkle with salt, pepper and dried thyme
Crush a few cloves of garlic over them
Roast at 400 for about an hour, until they are soft and the skins are slightly charred, they will be fragrant and juicy
Arrange on a platter and serve with sliced French bread and herbed goat cheese
Pesto also makes a nice accompaniment
